Eggplants with rice

  • 1 kilo eggplants
  • 1 cup olive oil
  • 1 onion
  • 3 tomatoes
  • 2 cups rice
  • 5 glasses water
  • Salt and pepper


Saute the onion in olive oil and add the chopped eggplants. Add the ground tomatoes, let them boil for a while and add water, salt and pepper. Then pour the rice and let boil until done.
