Chicken with okra



  • 1 chicken
  • 1 kg okra
  • ½ cup oil
  • 1 kg ripe tomatoes
  • 2 onions
  • 1 tsp sugar
  • Salt, pepper


Wash the chicken, cut it into pieces and leave to drain. Pour the oil into a pan and sauté the finely chopped onions with the meat. As soon as it has browned, add the chopped tomatoes, sugar, salt, pepper and 1 cup of water. Reduce the heat and leave to simmer. When the meat is tender remove it from the pan with a slotted spoon and arrange it on a plate. Now wash the okra, removing their caps, and fry them gently in very hot oil, in stages, until they brown. Then put them into the pan containing the sauce from the meat, add a little water and leave to cook over a low heat. Do not stir, as this would break up the okra. When they are ready, add them to the plate containing the chicken and pour any remaining sauce over the whole dish.
