Sauteed greens

INGREDIENTS

  • 2 kilos greens (wild amaranth, nightshade)
  • 3 bunches dill, finely chopped
  • 2 onions, finely chopped
  • 3 cups EXTRA VIRGIN OLIVE OIL
  • 8 small courgettes
  • 4 potatoes
  • 3 spring onions, finely chopped
  • 5 tomatoes, cut into medium-size slices
  • 4 cups water
  • Salt and pepper to taste

PREPARATION

Saute the onions, dill and tomatoes in the olive oil for 5 minutes. Add the water, potatoes and let boil for 10 minutes. Then add the greens, courgettes, salt and pepper. Cover the pot and let them simmer for 25 minutes. Stir occasionally and add water if necessary.
