Vegetable Pie with Wild Greens (Vlita)

Ingredients for the filling
  • 1 kg wild greens (vlita)
  • 2 cloves garlic
  • fresh onion
  • 2 bunches flat-leafed parsley
  • salt, pepper
  • 4 tablespoons olive oil
For the pastry
  • ½ kg flour
  • Approximately 1 small cup of olive oil
  • 1 small cup water
  • A little salt, small quantity of yeast


Chop the greens and sauté with plenty of finely chopped onion, parsley, and garlic. Season with salt and pepper. Let them cook through, and then put them aside to strain. Make 2 fairly thick sheets of pastry with the ingredients indicated. Lay the first sheet over the bottom of the baking tin, and then spread the greens over it. Cover with the second sheet, brush with olive oil or butter, and cook in a medium oven until golden brown.
