Zucchini with Eggs (Sfougato)

INGREDIENTS

  • 1 kilo zucchini, sliced in rounds
  • 500 g tomatoes
  • 1 cup of olive oil
  • 1 onion
  • 5 eggs
  • salt, pepper

PREPARATION

Sauté the finely chopped onion in the oil with the sliced zucchini. Add the tomatoes, salt and pepper and leave till well cooked. Beat the eggs, and pour into the pan. Stir, and cook till the eggs are done.
