Butter Cookies

  • 1,280 g flour
  • 260 g vegetable butter
  • 4 eggs
  • ½ kg sugar
  • 1 water glass of milk
  • 1 tablespoon ammonia bicarbonate
  • A little vanilla flavouring
  • 1 beaten egg to brush over cookies, or sugar for sprinkling.


Beat the butter with half the sugar until it whitens. Beat the remaining sugar with the eggs, and pour into the beaten butter. Dissolve the ammonia in milk and add to the mixture, followed by the vanilla and the flour. Knead well, shape into individual cookies and place on a greased baking sheet. Brush with beaten egg or sprinkle with sugar. Bake in a moderate oven.
