Yoghurt Pie



  • 1½ teacups sugar
  • 1 teacup butter
  • 3 teacups flour
  • 1½ teacups yoghurt
  • 5 eggs
  • 3 teaspoons of baking powder
  • 2 teaspoons lemon zest


Mix together the flour, baking powder and lemon zest. Beat the butter and sugar until smooth and add the egg yolks. Beat the egg whites till firm, and add to the butter, sugar and egg yolk mixture a little at a time, followed by the flour and then the yoghurt alternately (first some egg white, then flour, then yoghurt). Stir well and pour into a buttered baking dish. Bake in a moderate oven for about 1 hour.
