- 200 gr sliced smoked pork
- 5-6 fresh ripe tomatoes chopped without seeds
- 6 eggs
- salt and freshly ground pepper
Fry the bacon over low heat until the fat out. Add the tomatoes and sauté. Reduce heat and cook the tomatoes for 15 minutes to save their juices. Break the eggs one to one and add to tomatoes. Gently stir until thickened in small tufts. Season to taste and serve on a platter.
