Beat the eggs and add the oil. Mix well, adding the water and soda with the flour, until a fairly firm dough is formed. Cover with a cloth, and put to one side. Prepare the filling. Start by mixing the mizithra with the beaten eggs, cinnamon and mint. Then with the help of a rolling pin or machine, roll out a sheet of pastry. Use a glass to cut out circles. Add a teaspoon of filling to each circular disc, and then fold to close in the filling, forming a half moon shape. Add oil to a frying pan, let it get very hot, and then quickly fry the pies. Serve hot, drizzled with honey.
