Meat Soup



  • 1 kg meat suitable for stewing
  • 1 onion, finely chopped
  • A few sprigs of thyme
  • 1 leek, finely chopped
  • 2 carrots
  • Parsley and celery leaves
  • 1 bay leaf
  • 2 tomatoes, finely chopped
  • 2 small cups rice
  • salt, pepper


Wash the meat and cut into pieces. Cover in a suitable amount of water and bring to the boil. Skim, and when roughly half cooked, add the remaining ingredients, and towards the end of cooking, add the rice.
