Recipe ingredients
- 1 teacup oil
- 2 teacups sugar
- 1 teacup orange juice
- ½ teacup ‘tsikoudia’ (Cretan grape pomace spirits, similar to raki)
- 1 teacup walnuts
- 1 teacup raisins, currants or sultanas
- 1 tablespoon baking powder
- 1 tablespoon soda
- 1 teaspoon ground cinnamon and clove mix
- As much flour as necessary to bring the other ingredients together
Preparation
Beat the oil and sugar, dissolve the baking soda in the orange juice and add to the mixture. Add the tsikoudia, chopped walnuts, the cinnamon clove mix, and the dried fruit. Mix well, and then add the baking powder mixed with a little flour. Slowly add the rest of the flour, stirring all the time. Pour the mixture into a spring-form cake tin, sprinkle with sesame seeds, and bake in a moderate oven for 1 hour.
