- 2 kg fresh fava beans (more commonly known as broad beans in the UK)
- 3 teacups oil
- ½ head of garlic
- 750 g snails (small)
- Salt, pepper, flour, vinegar
Clean the beans, and wash the snails thoroughly in plenty of water. Sauté the garlic in oil; add the beans and the snails. Season with salt and pepper, and leave to simmer. When the beans and snails are well cooked, remove a little of the sauce, allow it to cool, add the flour and mix well. Add the flour mixture and the vinegar to the saucepan, and bring briefly to the boil until the sauce thickens a little. Remove from heat.
