Oven-baked Fish ‘Plaki’



  • 1 kg fish (grouper, snapper, bonito)
  • 1 cup oil
  • 500 g tomatoes
  • 1 bunch parsley
  • 2 cloves garlic
  • 1 cup rusk crumbs
  • Juice of 1 lemon
  • salt, pepper


Clean and wash the fish. Finely chop the parsley and mix with the finely-chopped garlic, salt, pepper and bread crumbs. Peel, deseed, and chop half the tomatoes, then lay out on the bottom of a baking tin. Put the fish on top and sprinkle with the herb mixture. Layer the other half of the chopped tomatoes on top. Sprinkle with oil and the juice of one lemon, and bake in a moderate oven.
