Cretan Cured Pork (Syglino)



  • Pork meat
  • salt, pepper, cumin, nutmeg


Remove the fat from the meat and cut into small pieces. Also cut the meat into small pieces (the size of a large walnut). Wash, and then salt the meat. When they have drained properly, add the fat to a saucepan and cook, stirring constantly with a wooden spatula. When the pieces of fat start to turn light golden, stop and add the lean meat and sauté until it has browned and all the water has been absorbed. Add pepper, cumin, and nutmeg. Once cool, place the syglina in tins or glass jars. The lean meat should be covered in fat and kept in a cool place. Syglina can be used in various dishes, including omelettes.
